Because the text is part of the code, every extra character adds more modules. Long text produces a dense pattern that needs a larger print and a steady hand to scan. Keep static text to a few sentences; for anything longer, use a dynamic text page or share a document with a PDF QR code.

The QR standard can technically hold a few thousand characters, but that capacity shrinks as the error correction level goes up. Characters outside the basic Latin alphabet, such as accented letters, other scripts and emoji, also take more space than plain letters and digits.
In practice, readability matters more than capacity. A code holding a single sentence prints comfortably on a small sticker; a code holding several paragraphs needs a much larger print, good lighting and a patient scanner.
