Start with the country code, for example +44 7700 900123 for a UK mobile. Spaces, dashes and the plus sign are removed for you; drop the leading zero you would dial inside the country.
Write the text that appears in the customer's chat box, such as “Hi, I'd like to book a table”. They can change it before they send it.
